Boring is good.

Nothing too exciting has been going on lately. Alex has a birthday to celebrate in preschool on Friday and whenever that happens I send a treat that I know is safe to school with him. His class has been peanut-free since the beginning of school. That means that parents can bring in baked goods as long as they don’t have peanuts or peanut butter icing. Since baked goods are such a touchy subject with peanut allergy sufferers I just make my own baked good and he eats that. This week he has decided to take a cupcake. I will use my Small Batch Baking book and make four cupcakes. Two will go in the freezer and one will be sent along with him. So where did the fourth go? Did you know that cupcakes go great with a morning cup of coffee! :-)

The Journey Begins

Last Tuesday I signed Alex up for kindergarten. To most this is just an emotional issue to deal with. For the most part it is for me too, but the other thing I have to deal with is his food allergy. A peanut allergy is quite complicated and many do not understand it. The school I am going to send him to has an action plan for kids with food allergies but I do not like that they don’t allow the teachers to keep the epi-pens in the classroom. Again, I will touch more on this later. While we have been on our peanut-free journey since he was 18-months-old, going to school 5 days a week with children much older than him is going to take a lot of getting used to. But just like everything else, I’m sure I’ll manage. It’s just going to take a while.
